Bill Collins

An aromatic spin on the classic Tom Collins made with our Pear Brandy featuring estate grown Bartlett aka William pears.

1½ oz New Deal Pear Brandy
¾ oz lemon juice
¾ oz simple syrup
Soda water
Lemon peel for garnish

In a Collins glass combine pear brandy, lemon juice, and simple syrup. Add ice, top with soda, and garnish with a lemon peel.

Cascadia Carré

Our spin on this New Orleans classic is sure to make the good times roll.

  • ¾ oz New Deal Rye Whiskey
  • ¾ oz New Deal Brandy
  • ¾ oz Cascadia American Bitter Liqueur
  • 1 barspoon Bénédictine
  • 2 dashes Peychaud’s Bitters
  • 2 dashes Angostura Bitters
  • 1 orange peel

Stir all ingredients in a mixing glass with ice. Strain over one large ice cube in an old-fashioned glass and garnish with an orange peel.

Cascadia Old Fashioned

The superb combination of bitter, smoky & sweet make this a perfect fireside sipper.

Combine all ingredients in a rocks glass over a large ice cube and stir to incorporate. Squeeze orange zest over drink and enjoy.

Classic Hot Toddy

  • 1½ oz New Deal Bourbon or New Deal Brandy
  • 1 T honey
  • ½ oz fresh-squeezed lemon juice
  • 1 cup hot water
  • lemon wedge, cinnamon stick, whole cloves, whole star anise

Place one lemon wedge, one cinnamon stick, 5 whole cloves, and one whole star anise into a warmed mug. Pour the bourbon or brandy and lemon juice over spices. Add hot water and stir in honey until dissolved.

French Mule

  • 2 oz New Deal Brandy
  • ¾ oz New Deal Ginger Liqueur
  • 1 dash Angostura bitters
  • Mineral water

Pour over ice and garnish with a lemon twist. Top with mineral water.
