Farm to Table Brunch at New Deal

At New Deal we are always eager to explore and collaborate with the most unique and creative people that make up Portland’s deep pool of culinary talent. We’ve embraced this spirit of adventure and have created a new breakfast series. Our first brunch was held Sunday, July 21st and featured a three-course extravaganza created by local urban farmer Stacey Givens, owner of The Side Yard Farm & Kitchen.

This special event featured a seed-to-plate brunch experience with three family-style courses highlighting the seasonal bounty of Stacey’s NE Portland farm. Our guests experienced a smorgasbord of freshly-prepared fare (cooked on site!) made from Stacey’s produce from the farm as well as locally sourced organic meats. For our part, New Deal created three specialty cocktails designed to perfectly complement each stage of the meal.

Chef/ Farmer Stacey Givens of The Side Yard is the magical combination of an urban farmer and chef. Based in Northeast Portland’s Cully Neighborhood, herself along with dedicated volunteers grow diverse vegetables on two urban lots. She sells her harvests to local restaurants, including Cocotte, Grain & Gristle, and Ned Ludd, in what she calls “chef-to-chef” produce service. She also uses her fresh produce in her own meals for brunches and suppers. Her inspiration to get her hands in the dirt sprouted when she was cooking at Rocket (now Noble Rot), which had the first rooftop garden of its kind in Portland.

Side Yard Farm & KitchenBrunch at New Deal was great fun. Diners enjoyed the intimate family-style atmosphere which allowed Stacey to talk about her passion for food and for New Deal staff to explain and educate about the cocktail pairings. Eating together at one long table also provided an immediate and natural way to make new friends and experience the food and drink in a fun, communal environment. The event was such a hit, we have immediately scheduled the next brunch for Sunday, October 20th, featuring an entirely new menu by Stacey and new cocktails by New Deal. Please join us!

July 2013 Farm to Table Brunch Menu

New Deal and Side Yard Farm July 2013 Brunch Menu with Cocktail Pairings:

First Course

  • Lil’ Flapjacks–Grilled Nectarines. Anise Hyssop Butter. My Bee’s Honey Syrup. Pecans
  • Cocktail #1: Strawberry Ginger Bellini–New Deal Vodka and Ginger Liqueur tickle your nose in this bubbly Bellini that features strawberry juice from Portland Juice Press.

In 6 oz. champagne flute:
1 oz. Ginger Liqueur
.5 oz. New Deal Vodka
1.5 oz. strawberry/lemon/honey Juice
–Top with Jaume Cristalino champagne (leave .25 inch room at top of glass)

Second Course

  • Breaky Sando–Aged Cheddar Crumpet. Dad’s Fried Chicken. Farm Greens. Pickled Summer Squash and Basil Relish. Fried Egg.
  • Cocktail #2: Hot Monkey Bloody Mary–Hot Monkey vodka makes our house-recipe Bloody Mary a spicy-hot item for brunch! Complete with a summery pickle garnish.

In 10 oz. highball glass:
Over ice, pour about 5 oz. bloody mary mix:
2 oz Hot Monkey
2 T dill pickle brine
1/2 t Worcestershire sauce
1/4 t onion powder
1/4 t garlic powder
1/4 t lemon pepper
8 oz Campbell’s tomato juice
0.5 oz fresh squeezed lemon juice
0.5 oz fresh squeezed lime juice
Place tall wide straw in and garnish across top of glass

Third Course

  • Summer Omelet–Farm Eggs. Gale’s Green Beans. Squash Blossom and Runner Bean Flowers. Side Yard Cippolini Onions and their tops.
 Tarragon. Sheep’s Cheese.
  • Cocktail #3: Lavender Gin Lemondae–Gin No. 1 is paired with lavender-honey lemonade from Portland Juice Press for a floral refreshment to start your day feeling bright.

In 8 oz. old fashioned glass, place lemon wheel against side of glass, add ice to secure it there, then pour:
1.5 oz Gin No. 1
2 oz. Lavender/Lemon/honey juice
